John: And it’s not just the gluten thing, but gluten-free stuff is what you have to look for—at least as a start.

Now, when I make pancakes, I just take any flour, throw in some baking powder, a little shake of salt, an egg, and some buttermilk. Mix it up—boom, pancake..

But obviously, it has wheat. And I don’t like pancake mixes in general.

But I have to say, there’s one gluten-free pancake mix that’s really good. It’s from a company called P.A.N. They have a gluten-free pancake mix made from a blend of flours and starches.

The package gives you instructions, but I don’t care what they tell you to do. I just throw in an egg and some buttermilk, treat it like regular flour, and make pancakes. And I swear, nobody in the world could tell that these have no wheat.

I buy it for Mimi so she can have a satisfying pancake that tastes just like the real thing—but it’s not. It’s just a mix of crazy flours and starches.

John: Yeah, P.A.N. has it. Mexican stores carry this brand, and you can find it online. They have a bunch of different pancake mixes, but this gluten-free one is the one that really surprised me. It’s just that good.

Adam: Everybody has a podcast, but not everybody can tell you how to make the best gluten-free pancakes.

That alone is worth the price of admission.
