Adam: If you use an Android phone and enjoy using the voice-to-text feature for its convenience, but you don’t want Google saving all your transcripts (which they almost certainly do), there’s an open-source voice-to-text system you might want to check out. It’s created by a company based in Austin, and their entire website humorously explains how they’re “not lame.”
You can find it at futo.org. You can even download it as an APK, so you don’t have to get it from the Play Store. This way, you can be more confident about its transparency. You can also check out their GitLab to see how everything works.
While it’s not quite as fast as Google’s system, it’s still pretty accurate. Most importantly, you can trust that it’s not saving your data to potentially embarrass you later in life.
